If you’re looking for a healthy light scone, look no further than this recipe from Summer TABLE – ready in less than 20 minutes with no mess or fuss.

Ingredients (serves 4)

  • 200 grams spelt flour
  • 2 ½ tsp baking powder
  • ⅓ cup cream
  • ⅓ cup lemonade (room temperature)
  • extra flour
  • milk or beaten egg for glazing
  • 300 ml thick cream
  • 250 grams strawberries, sliced


  1. Preheat oven to 210C. Sift flour and baking powder into a bowl and make a well in the middle. Add cream and lemonade to the flour and gently mix until soft and sticky. Be careful not to over-mix, 3–4 stirs should do it.
  2. On a board dusted with flour, turn the dough out and pat into shape (about 3 cm high). Using a round 5–6 cm cookie cutter cut out scones. Do not twist the cutter, just push. Place onto a baking tray (lined with greaseproof paper and dusted with a tablespoon of flour), so the scones are touching each other. Glaze tops with a little milk, and bake in the top rack of the oven for 12–15 minutes.
  3. Serve while scones are still warm with a dollop of cream and a layer of sliced strawberries.

Notes... For a decadent ladies morning tea, try using champagne instead of lemonade! Of course you can't let the rest of the bottle go to waste!

  • Lemonade is not bad in scones, it is the gas in the drink that does it. My granny loves hers with ginger beer in them, the stuff she makes herself.

  • I always have a bit of a chuckle when I see lemonade in scones. I know a number of people that use it as an ingredient. I do love a scone with jam and cream and don’t make them often enough.


  • So many people have told me that scones made with lemonade are so fluffy. I would change it to diet lemonade to make it a bit healthier. I don’t make scones very often but will try this recipe next time scones are on the menu.


  • Sorry but I don’t think these are healthy in my eyes…lemonade is sugary and cream is fatty..but I must admit lemonade makes a wonderfully light scone. Wonderful recipe for a special treat.


  • I use a full cup of cream and a full cup of lemonade with 3 cups SR flour and nothing else. I don’t know what spelt flour is? I used to use this for pizza base aswell it works great.


  • Nice ingredients except for the lemonade (not something I would buy or put in our bodies), I would prefer to use a fresh lemon.

  • I love scones but I never make them myself. My hubby makes a great scone, but he does so sparingly. You have to eat them when they’re straight out of the oven so they’re best made when visitors come over, I think! Haven’t used spelt flour before.


  • Mine is just a cup of sr flour a cup of cream and a cup of lemonade. No glacing or baking powder and they come out great. No healthy but yum and so soft. I use to use it for pizza base if you work the dough a bit more it comes out firmer.
