A quick and easy self saucing pudding. Loved so much by all the family, I usually double the recipe.


Ingredients (serves 6)

  • 1 cup SR Flour
  • 3/4 cup Sugar
  • 1/2 teaspoon Salt
  • 60 g Butter, melted
  • 1/2 cup Milk
  • 2 tbs Golden Syrup
  • 1 1/2 cups Boiling Water
  • 30 g Butter

Method

  1. Preheat oven to 180 degrees.
  2. Sift the flour, sugar and salt into a bowl.
  3. Add melted butter and milk, combine thoroughly.
  4. Pour into greased baking dish.
  5. To make the butterscotch sauce: Combine the 2 tablespoons of golden syrup, 1 1/2 cups of hot water and 30g of butter in a saucepan, stir over low heat until butter melts.
  6. Pour butterscotch sauce over pudding carefully.
  7. Bake for 30-40 minutes.

Notes

I sometimes reduce the amount of sugar in the pudding mixture, down to 1/2 cup. When pouring the butterscotch sauce over the pudding mixture, pour it over the back of a spoon, this will allow the sauce to gently fall onto the pudding mixture without putting holes in the pudding.

  • You can not bet a butterscotch pudding for comfort food. This should be better then the package ones you can get plus it is made with love.
