This is a wonderful healthy dessert packed full of goodness with vegetable and (soy) beans for an amazing boost of fibre, vitamins, minerals and protein in a dessert that is actually good for you! Sweetened with dried dates


Ingredients (serves 4)

  • 1.5 cups cooked mashed pumpkin
  • 300gm SIlken Tofu
  • 6 dried dates
  • 0.5tsp mixed spice
  • 1 tbl milk (or water)

Method

  1. Add the cooked mashed pumpkin and tofu to blender with milk/water and blend until smooth
  2. Add 6 dried dates and mixed spice and blend until mixed
  3. Refrigerate until chilled through!

  • A nice recipe with silken tofu! I’ve never been a big fan of tofu, but I’ve tried once to make a tzatziki sauce using silken tofu instead of Greek yogurt, and it turned out quite good!!
