This is a super simple dessert that can be pre-made or dished up straight away depending on the desired texture wanted. This recipe is gluten free, refined sugar free and dairy free! Made with coconut cream and avocado as the creamy base, with added maple syrup for the sweetener and carob or cacao powder for richness of flavour.

Ingredients (serves 4)

  • 400ml can Coconut cream
  • 1 large Avocado
  • 2-3 tablespoons Carob or cacao powder
  • 2-3 tablespoons Pure maple syrup

Method

  1. Place all ingredients into a blender and blend until smooth and creamy.
  2. Pour into individual bowls and refrigerate for 2-3 hours.
  3. Serve with fresh cut strawberries or fresh blueberries.

  • yummy….I dont make many puddings because most of the time im the only where to eat them.

  • Mm I even have all these ingredients in my cupboard. I’m adding this to my list of things to do with avocado!
    Does anyone know if coconut milk instead of coconut cream would work?


    • Probably not as coconut cream contains 100% coconut whereas coconut milk can be anywhere from 50%-80% therefore making the pudding runnier and it might not set.
