This Slow Cooker Chicken Drumsticks recipe is perfect for those weeknights when you run in the door at the last minute and all the kids are starving!

We love this recipe for Slow Cooker Chicken Drumsticks because you can do a quick prep in the morning before work, switch it on as you’re leaving the house, and dinner will be ready when you get in!

Slow Cookers are a great solution to having little time to cook. Ironically, they take so long to cook something that it saves you time! If you don’t have a slow cooker and you’re thinking that leaving something on the stove all day is a bad idea, you’re right. It is a bad idea. But slow cookers have been designed so you can safely leave them unattended for many hours. Slow cookers cook at a relatively low temperature, which make it amazing for those delectable winter dishes that should be cooked on low for a few hours. Classic pot roasts, pork shoulders, lamb shanks and this slow cooker chicken drumsticks all do well in slow cookers. Despite this, on the internet the slow cooker favourites all point towards soups!

According to this article by Hamilton Beach, a small slow cooker uses roughly about the same power as one and a half 100 watt light bulbs. Slow cookers use less energy because it cooks with contained heat! So slow cookers save energy on two fronts; your home’s electricity bill, and on you, the cook.

This recipe for slow cooker chicken drumsticks can be served with pretty much anything – rice, beans, roast veg or salad! Ingredients (serves 6)

  • 1kg Chicken Drumsticks
  • 3 tbsp Mexican Seasoning
  • 400g Tin crushed tomatoes
  • 1 large Brown Onion finely sliced

Method

  1. Place the chicken drumsticks into the base of your slow cooker - preferably just one layer of drumsticks.
  2. Sprinkle the mexican seasoning over the drumsticks followed by the onion.
  3. Pour the tin of tomatoes over the top of everything and stir/move slightly to get good coverage.
  4. Set your slow cooker on the LOW setting and cook for 6 - 8 hours.

Notes

Serve with pretty much anything ... corn cobs, green veges, an avocado salsa. In this version I've served with brown rice and some corn chips. A lovely dollop of sour cream would be nice too!

  • Just made this for dinner last night – delicious – I added peas, finely diced carrots, red/green/yellow capsicums and baked it in the oven in a casserole dish with the lid on for 1 hr 20 mins on 150 degrees! Served with boiled rice. Of course removed the skin from chicken. Next time I will add corn kernels too.
