This rustic style slow cooker recipe is a good one for the meat lovers featuring sausages and bacon with big chunks of vegetables.


Ingredients (serves 5)

  • 10 sausages
  • 10 rashers short cut bacon, roughly chopped
  • 3 large carrots, roughly chopped
  • I large sweet potato, roughly chopped
  • 1 large onion, roughly chopped
  • 700 ml passata
  • 1 cup vegetable stock
  • salt and pepper to season

Method

  1. Roughly cut all of the vegetables into large chunks.
  2. Roughly cut the bacon.
  3. Place sausages, bacon and vegetables in the slow cooker.
  4. Add passata and vegetable stock to the slow cooker.
  5. Season with salt and pepper.
  6. Cook for 4 hours on slow setting.
  7. Serve with steamed/boiled brown rice.

Notes

This recipe has a tasty tomato sauce and I do serve this meal with crusty bread to soak up the extra sauce. I alternate with different vegetables - choose your favourite vegetables for this recipe. Serve with steamed/boiled brown rice and crusty bread.

  • I just thought I’d let you know that I have your recipe in the slow cooker as I’m writing this. It appealed to me for a number of reasons: it yields a lot (I put 16 sausages in as they come in packs of 8). It looks tasty, I added an extra tin of diced herb, garlic and basil tomatoes, and I just crumbled a couple of stock cubes over the top and added a cup of water and stirred. I used herb and garlic sausages. There are only the two of us, and I’m fairly time poor, so I love recipes that are afffordable, with minimal preparation and you can put on and walk away to do other things. I think I will have to freeze some lol. I want to thank you, and if you have any more similar recipes and have the time to post them I would love to see them.
