A Slow Cooker Sausage Casserole is the perfect midweek dinner for everyone!

In fact, we’d go so far as to say this Slow Cooker Sausage Casserole Recipe is a year-round, all-round winner in the All Time Easy Dinner stakes!

The very best thing about a Slow Cooker Sausage Casserole is the fact that all the magic happens during the day while you’re going about your day.  The slow cooker or warming drawer (yes, they slow cook too) works on all the ingredients – cooking at a low temp so that the sausage is beautifully cooked but still tender, the veggies are soft and meld into the mix and the sauce is as rich as it’s going to get. Slow Cooker Sausage Casserole is literally heaven on a plate.

If you’re in a massive hurry to serve up dinner the minute everyone bundles through the door, simply serve your Slow Cooker Casserole on a thick slice of toasted multigrain bread and add a handful of microwaved green baby peas.

If you have a little more time, make up a lovely big bowl of mashed potato or polenta or boil up a family-size serving of your favourite pasta and throw together a quick green salad.

The cooler months are the perfect time to make this Slow Cooker Sausage Casserole – beautiful rich flavours and perfect for busy nights when you want to arrive home to dinner ready to serve. But we do love a slow cooker recipe all year round.

Ingredients (serves 8)

  • 6 Small/medium potatoes
  • 1 Medium sweet potato
  • 3 Large carrots
  • 1 Large onion
  • 1 Celery Stick
  • 1 Tablespoon Tomato paste
  • 3 Tablespoon Worcestershire sauce
  • 1 Tablespoon parsley
  • 1 Tablespoon rosemary
  • 1 Litre beef stock
  • 12 Sausages

Method

  1. Cut vegetables chunky and add to slow cooker.
  2. Add all sauce ingredients and mix through vegetables.
  3. Add raw sausages to slow cooker and place on low for 8 hours.
  4. 1/2 hour before finishing time mix 1-2 tbs of corn flour with a little water and add to slow cooker to thicken the sauce.
  5. Transfer to a serving dish and top with fresh herbs.
  6. Serve with mashed potato, rice, pasta or even on top of chunky bread.

Notes

You can use any type of sausages for this Slow Cooker Sausage Casserole - beef, lamb, chicken or pork. To add a little more spice, you might even like to chop a little chorizo into the mix too.
