These sticky date muffins are such a quick and easy cake mix to whip up, but so delicious.


Ingredients (makes 12 Muffins)

  • 250 grams Dates, chopped
  • 1 tsp Bicarbonate of soda
  • 1 1/2 cups Boiling water
  • 125 gms Butter, softened
  • 1 cup Brown sugar
  • 1 tsp Vanilla
  • 2 Eggs
  • 1 3/4 cups Self raising flour, sifted
  • CARAMEL SAUCE
  • 1 cup Brown sugar
  • 300 mls Thickened cream
  • 12 tsp Vanilla
  • 60 grams Butter

Method

  1. Preheat oven to 180 degrees.
  2. Place muffin pans in 12 hole muffin tray.
  3. Place dates and bicarbonate of soda into a bowl. Pour over boiling water. Allow to stand for 20 mins.
  4. Using an electric mixer, beat butter, sugar and vanilla until pale and creamy, add eggs one at a time, beating well after each addition.
  5. Using a large metal spoon, fold through date mixture and flour until well combined.
  6. Spoon mixture into muffin pans.
  7. Bake for 20-25 minutes or until a skewer inserted into centre comes out clean. Turn onto a plate.
  8. MAKE SAUCE combine all ingredients in a saucepan over medium heat. Cook, stirring often until sauce comes to boil. Reduce heat and simmer for 2 minutes.
  9. Place muffins in a bowl and drizzle with sauce. Serve with cream or ice cream or custard if desired.

  • I prefer to make sticky date muffins without adding sugar as the dates are already sweet them selves.

  • yum! i have never had the muffin variant but this looks really good. i would add walnuts to this somehow as well.


    • A handful of nuts is always good in muffin and cake recipes.
