This sticky date pudding is a classic winter warmer, definitely just for treats only!


Ingredients (serves 8)

  • 250g pitted dates, chopped
  • 1 cup water
  • 1 teaspoon bicarbonate of soda
  • 100g butter
  • 3/4 cup brown sugar
  • 2 teaspoons vanilla essence
  • 2 eggs
  • 1.5 cups self raising flour
  • CARAMEL SAUCE:
  • 1 cup brown sugar
  • 100g butter
  • 2 teaspoons vanilla essence
  • 1/2 cup thin cream

Method

  1. Preheat oven to 180°C. Line the baking pan with baking paper.
  2. Place dates and water in a saucepan over high heat and bring up to a boil. Stir in the bicarb and take off the stove for 10 minutes to cool.
  3. Beat butter and sugar until mixed well. Add eggs, beating well after each addition. Beat in the vanilla. Fold in the date mixture and flour until combined.
  4. Pour into prepared pan and bake for approx 45 minutes.
  5. While the pudding is cooking, make the caramel sauce: stir sugar, cream, butter and vanilla in a saucepan over medium heat for 5 minutes or until smooth.
  6. Serve in a bowl and pour over the caramel sauce.

  • Sticky date pudding is such lovely winter warming treat. I make mine gluten free with almond meal, dates and just 1 tbsp coconut palm syrup. I make the date drizzle with some dates, nut butter and water.

  • Sticky Date Pudd is my all time fave…would have to limit myself as it is a little too sweet for me but one must have a pleasure sometime.
