A delicious sweet treat that you don’t have to feel to guilty about. This makes quite a large quantity (2 large slice slabs) so great for functions. Half recipe to still sufficiently provide a few serves per family member of for a casual afternoon tea


Ingredients (serves 20)

  • Coconut milk 500ml
  • Full cream milk 600ml
  • caster sugar 1 1/4 cup
  • Fine semolina 1½ cup
  • Unsalted butter 100 g
  • (7 eggs total) 3 whole eggs, 4 egg yolks
  • Zest of 2 oranges
  • Filo Approx 12-15
  • Sliced Almonds Enough to cover the top
  • Marmalade 1/3 jar
  • Water 300ml

Method

  1. Bring milk 1/3cup sugar & zest of 1 orange to just below boiling point. Whisk in semolina in a steady stream and until thick.
  2. Whisk in 1 tbsp butter, put in bowl and cover with plastic wrap. Set aside for 20 minutes or until slightly cooled. Stir in eggs and egg yolks, set aside to cool to room temperature.
  3. Preheat oven to 170°C. Brush a filo sheet with butter, fold in half and brush top with more butter. Layer 4 pieces and use to line base of pan. Pour over filling
  4. Layer the top with pastry and cover with almonds and left over butter Bake for 45min-1hr
  5. *Orange syrup 1/2cup caster sugar 1/3 jar marmalade Zest of 1 orange 300ml water Combine ingredients for orange syrup in saucepan and reduce, pour hot syrup over the cooled pastry . Cut into diamond shapes and serve :)
