Magical, zingy, dark-red smoothie


Ingredients (serves 2)

  • 1 Beetroot cut in chunks
  • 1 large carrot roughly cut in sticks
  • 2 sticks of celery
  • 1 tbsp goji berries
  • 1 x 2cm young ginger
  • 1 red apple, core removed and quartered
  • 1/2 cup of coconut water
  • 2 tsp cacao powder
  • 1/2 cup of plain yogurt

Method

  1. Prepared fruits and vegetables by rinsing them in cool water, cut them to size, place them in an electric blender.
  2. Add coconut water, yogurt and cacao powder, blend in medium speed till all ingredients are combined.
  3. Serve immediately.

Notes

This is my go-to drink when I'm feeling low in energy and wanting something not only pleasing my eyes but entertaining my taste buds too.

  • So glad to hear that you are going to try this.
    If you are using dried goji berry, soak them in water for 5 minutes or so to re-hydrate them. I find it by doing so the berries will mix in with the rest ingredients better.
