Delicious and quick to prepare. Spicy and tender, a real crowd pleaser


Ingredients (serves 4)

  • 8 chicken thigh fillets, cut into lge pieces
  • 1/4 cup honey
  • 1 tablespoon Chilli sauce
  • 1 small lime , zest and juice
  • 1/4 cup coriander leaves, chopped

Method

  1. Combine chicken, honey, chilli sauce, lime zest and juice in a bowl . Add coriander leaves to chicken mixture , mix well Season with salt and pepper
  2. Place chicken in a single layer on paper lined baking tray. Bake in 200 degree oven ,turning occasionally for 25 minutes or until chicken is caramelised and cooked through
  3. Serve with coconut rice or Asian slaw

Notes

I've said it feeds 4.... thats if they are big fillets and depending what you serve it with . I've made this before using small fillets, and just had it with coconut .... rice and my hubby and i demolished the lot ! Finger licking good .

  • This sounds really good. Not sure about the coriander though haha and I would use breast as I’m not a fan of thigh meat.
