Quick and easy, plus works well with veggies that have been in the fridge a while! For added flavour roast the veggies instead of cooking in a saucepan.

Ingredients (serves 6)

  • 1 tablespoon Olive Oil
  • 1 tablespoon Harissa Paste (or a small amount of crushed fresh chilli)
  • 1 Large Onion chopped
  • 750 Grams Sweet Potato chopped
  • 750 Grams Pumpkin chopped (butternut works best)
  • 6 Cups Vegetable Stock

Method

  1. Heat oil in a large pan. Add harissa paste (or chillis), onion, potato and pumpkin. Cook for 8-10 minutes, stirring occasionally.
  2. Pour in the stock, cover and simmer for 20-25 minutes. Blend until smooth.
  3. Garnish with coriander to serve.

Notes

Put a dollop of sour cream in right before serving. You can also use carrot if you haven't got enough pumpkin or sweet potato. Serve with a nice crusty bread.

  • This looks great but I’d probably leave the chili out and serve with sour cream!

  • I’ve never thought to add sweet potato to pumpkin soup – I can’t wait to try it.

  • I am glad this has sweet potato in it, not white or pink ones are they are starchy and not suitable for people with diabetes or insulin resistance. Starchy food converts to sugar, causing a quick energy spurt, then a long time of tiredness and fatigue.
