Make these delicious chips at home and boost your children's (and your?) vegetable intake!


Ingredients (serves 2)

  • 1 large sweet potato
  • 1 tablespoon olive oil
  • 1 teaspoon rosemary
  • salt to taste

Method

  1. Use a mandolin to slice the sweet potato very thinly.
  2. Toss in olive oil and sprinkle with rosemary. Sprinkle with a touch of salt to taste.
  3. Arrange on a plate so that none of the slices are touching each other. Microwave on 80% for 3 mins and then turn over and repeat for a further 2 mins.
  4. They are cooked when crispy.

Notes

You may need to adjust the time microwaving these according to the thickness of the slices and the wattage of your microwave.

  • I’ve never tried Sweet Potato before, but I love homemade chips … will definitely try these!

  • I’ve tried sweet potato chips before and really struggle to get the crunch happening. When I do, they need to be eaten quickly because it doesn’t last long. They are delicious and healthy
