Summer is party time, and this mini version of a Thai Beef Salad in a cucumber cup makes great party finger food. It's quick, fresh and tangy, and effortlessly satisfying on a hot summer’s night. If you don’t have any leftover roast beef, not to worry, cook a steak on the barbecue or if time is not your friend, drop into the deli and pick up some sliced rare roast beef.

Ingredients (serves 10 | makes 20 )

  • 2 continental cucumbers
  • 300 g cooked roast beef
  • 1-2 handfuls bean shoots, chopped
  • 2 spring onions, thinly sliced
  • 1 handful mint leaves, chopped
  • 1 handful coriander, chopped
  • 1 long red chilli, deseeded and finely chopped
  • 3 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 1 garlic clove, crushed

Method

  1. To make dressing, add lime juice, soy sauce, fish sauce, sesame oil and garlic to a jar with a lid, then shake until combined. Taste and adjust to your liking.
  2. Mix chopped beef with finely chopped spring onions, chopped bean shoots, mint and coriander. Toss with enough dressing to flavour but not make it too sloppy.
  3. Cut continental cucumbers into 1½ cm lengths. Then hollow out the seeds (only halfway) making a cup. Fill with beef mix and top with chopped chilli.

  • I would leave out the chilli as I am not huge on spice but these look like a great entertaining snack.

  • I love Thai beef and I did notice that in Thailand they serve a lot of there meals with a side of cucumber..but I’ve never seen it served like this! I love the idea..very creative of you!

  • What a wonderful idea! I am always looking for healthier snacking options & healthier options when you go to parties or family doo’s. Of course you have no control when you attend a function. However you can set a better example for others when you do entertain in your own home. My husband and myself speak about setting healthy eating examples for our daughter as she grows & hopefully she will take that throughout her adult hood and then to her kids also.     • Hey mom80542. I feel the same about our family and that’s why I wrote Summer TABLE. Full of fast, delicious and healthy recipes. So many healthy recipes are boring or tasteless and it doesn’t have to be that way. I think all the discussion around what is healthy and what is not, has made healthy confusing and complicated. It doesn’t need to be. :)
