When passionfruit are in season, buy a big bag and make a double batch.


Ingredients (makes 1 medium jar or 2 small jars)

  • 60g Fresh passionfruit (about 8)
  • 60g butter
  • 3 eggs
  • 100g raw sugar

Method

  1. Place sugar in Thermomix bowl and mill 3 seconds speed 9.
  2. Add remaining ingredients and cook 15 mins speed 2 80 degrees.
  3. Pour into clean jar and refrigerate when cool.

Notes

This sets to a firm curd in the fridge. Reduce the number of eggs from 3 to 2 if you want it to be runnier. Keep refrigerated. Use within 3 weeks.

  • I adore lemon curd and make it regularly. I should imagine I would enjoy passion fruit curd too. I don’t have a Thermomix though so I’ll have to do it in a saucepan
