These super easy, super quick muffins are great – and not too bad for them either!

My little eater is turning into a bit of a fusspot. He started out with baby lead weaning eating broccoli, broad beans and scrambled eggs. But now he mostly eats bananas, papadums and cheese! So easy, healthy finger foods are my friends right now.

Ingredients (serves 1 | makes 12 mini muffins)

  • 220g Can of baked beans
  • 1 egg
  • 1/2 cup wholemeal self raising flour

Method

  1. Pre-heat oven at 180 degrees. Mix all three ingredients in a bowl (should be like cake batter).
  2. Spoon into a mini muffin tray.
  3. Bake at 180c for about 10 minutes or until risen and slightly golden.

  • I wouldn’t never have thought to do this. I’ll have to try this for my little one

  • Looks simple enough. Easy enough to add to, possibly have the muffin as a side dish. Doesn’t quite seem enough to be a complete meal by itself

  • I would partly drain then mash the baked beans as I’m not sure I would need all the liquid from the baked beans. Some cans have more liquid than others.

  • Something different, never thought to use baked beans in a muffin. So creative, things us mums have to do to get kids to eat
