These super easy, super quick muffins are great – and not too bad for them either!

My little eater is turning into a bit of a fusspot. He started out with baby lead weaning eating broccoli, broad beans and scrambled eggs. But now he mostly eats bananas, papadums and cheese! So easy, healthy finger foods are my friends right now.


Ingredients (serves 1 | makes 12 mini muffins)

  • 220g Can of baked beans
  • 1 egg
  • 1/2 cup wholemeal self raising flour

Method

  1. Pre-heat oven at 180 degrees. Mix all three ingredients in a bowl (should be like cake batter).
  2. Spoon into a mini muffin tray.
  3. Bake at 180c for about 10 minutes or until risen and slightly golden.

  • What an interesting way to incorporate baked beans into a different meal. I usually just have them on toast with eggs

  • So easy to make might make a double batch as I buy 440g tins and have twin toddlers anyway. Think these might be eaten by older children.

  • Are you blending the baked beans before mixing it with the other ingredients ?


    • no … i just add them as is. You could mash them up with a fork if your kiddo is not a fan of beans or lumps.

    • So this was our lunch today and it was great. I added a little bit of grated tasty cheese for a bit of cheesy flavour and it was a hit with Master 2!
