An old childhood favourite of mine. It brings back so many memories. Now I make it for my family and my kids love it just as much. Eaten without a fuss by all three of them.


Ingredients (serves 6)

  • 1 Onion
  • 2 tbsp Butter
  • 1 packet Chicken noodle Soup
  • 1 packet Cream of Chicken Soup
  • 400g Can of Tuna
  • 2 cups Milk
  • 3/4 cup Cheese
  • 1 cup Frozen peas and corn
  • 2 cups Brown rice

Method

  1. Boil water in pot for rice. Once boiled add rice to cook. Dice onion and fry in pan with butter. Once browned, add both packets of soup. Stir to combine. Gradually add milk, stirring after each addition until smooth and creamy.
  2. Drain tuna. Add tuna, cheese, peas and corn to the dish. Stir to combine and cheese is melted. Turn heat to low and let simmer for 5 minutes or until the noodles are cooked. Drain cooked rice. Divide rice among bowls. Add tuna casserole on top. Serve.

Notes

You can also serve it with pasta if you like. Or add extra veggies like grated carrot.

  • A childhood favourite of mine too. I found a recipe for this that blitzes up cauliflower and milk for the sauce layer. Heavenly!
