How about a tasty and healthy vegan banana berry muffin recipe to put in the lunch boxes and enjoy with a cup of tea.. yum

Ingredients:

  • 2 bananas
  • ¼ cup coconut oil, melted
  • 3 tablespoons chia seeds
  • ¾ cup water (or coconut milk)
  • ¾ cup desiccated coconut
  • ¼ cup sugar
  • 1 cup cooked Quinoa ( about ¾ cup raw)
  • 1 ¼ cup self-raising flour
  • 1 tsp baking powder
  • 1 cup blueberries or berries of choice (frozen or fresh)

Method:

  1. Pre-heat oven to 180 degrees
  2. Cook Quinoa as per packet directions, drain and set aside to cool
  3. Place bananas, sugar, coconut oil, chia seeds and water in a food processor on high until well combined and smooth. Pour mixture into a large mixing bowl and fold through flour, desiccated coconut, baking powder and quinoa until well combined. Gently mix through berries.
  4. Line a muffin tray with patty papers or grease well with oil spray. Fill patty papers and place in pre-heated oven for 45mins – 1 hour or until a skewer inserted in
