How about a tasty and healthy vegan banana berry muffin recipe to put in the lunch boxes and enjoy with a cup of tea.. yum
Ingredients:
- 2 bananas
- ¼ cup coconut oil, melted
- 3 tablespoons chia seeds
- ¾ cup water (or coconut milk)
- ¾ cup desiccated coconut
- ¼ cup sugar
- 1 cup cooked Quinoa ( about ¾ cup raw)
- 1 ¼ cup self-raising flour
- 1 tsp baking powder
- 1 cup blueberries or berries of choice (frozen or fresh)
Method:
- Pre-heat oven to 180 degrees
- Cook Quinoa as per packet directions, drain and set aside to cool
- Place bananas, sugar, coconut oil, chia seeds and water in a food processor on high until well combined and smooth. Pour mixture into a large mixing bowl and fold through flour, desiccated coconut, baking powder and quinoa until well combined. Gently mix through berries.
- Line a muffin tray with patty papers or grease well with oil spray. Fill patty papers and place in pre-heated oven for 45mins – 1 hour or until a skewer inserted in
