Before becoming vegan I could never have imagined how many uses the humble date has. They are so versatile, with so many uses and I find them in more and more recipes. Who would have thought that dates could be the basis of a tart shell? I love dates, almost as much as I love Fridays! This is a lovely recipe. Incredibly easy, looks beautiful and tastes amazing. Perfect for a weekend treat.


Ingredients (makes 8 Individual Tarts)

  • 1 1/2 cups Almonds
  • 1 1/2 cups Pitted Dates
  • 3 cups Frozen Berries
  • 1/2 cup Sugar
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Water
  • 4 Tablespoon Cornflour

Method

  1. Prepare 8 individual fluted loose bottom tart cases - I would recommend putting a disc of paper in the bottom to help in getting them out as the crust can be a little sticky.
  2. Grind the almonds into a fine but not powdery meal in kitchen food processor. Add dates and enough water to form a dough that holds together when pressed. Occasionally stop the machine to scrape down the sides of the bowl to distribute the ingredients. Press the dough into each tart shell.
  3. Add all ingredients into saucepan and increase heat. When almost at the boil, add cornflour and combine until smooth. Allow to thicken. Then simply fill each tart shell and refrigerate. See how long you can wait before you try them!

  • Nice ingredients except for the sugar. Think I would use a small amount of yacon syrup and raw vanilla powder to sweeten instead. Also would rather use arrowroot/tapioca instead of cornflour.

  • that looks soooo devine yum. most Saturdays I go away to the holiday house catching up with my parents. we now have to cook up dessert and we judge them too. this is a perfect one to make since my step father is gluten free.
