Ingredients (serves 8)

  • 2 large zucchini - grated
  • 2 large carrots - grated
  • 1 diced capsicum (we used red)
  • 1 diced brown onion
  • 1/2 bunch spring onions - thinly sliced
  • 2 tbsp plain flour
  • 250g diced bacon
  • 1/2 tbsp worcestershire sauce
  • salt and pepper (to season)
  • 8 eggs
  • 250g grated tasty cheese - grated
  • parsley - to garnish (optional)

Method

  1. Fry diced brown onion, bacon and capsicum with a dash of oil, for approx 5 mins or until onion and capsicum softened. Grease an ovenproof dish (I used two large casserole dishes)
  2. Whisk eggs and combine with Worcestershire sauce and salt and pepper. Combine all other diced ingredients in a large bowl, together with grated cheese. Add cooked onion, bacon and capsicum and combine well before adding egg mixture and finally, the flour. Stir to combine and pour into prepared dishes, ideally about an inch thick.
  3. Bake in a preheated oven 180 deg (160 deg fan forced) for approx 40 mins or until skewer comes out clean when tested.

  • I love that you’ve added a little Worcestershire sauce to this, it would give it a really nice flavour. I’d be tempted to add a little garlic and maybe some chilli to it, if you don’t think it would ruin it?
