These vegetable quinoa bites are a healthy snack or lunchbox treat.


Ingredients (makes 40 Bites)

  • 2 cups White Quinoa, cooked
  • 1 cup mashed pumpkin
  • 1 small zucchini, grated
  • 1 small carrot, grated
  • 2 Tbsp corn kernels
  • ¼ cup wholemeal flour
  • 150g feta, crumbled
  • 1 large egg
  • Salt And Pepper, to taste

Method

  1. Preheat oven to 180C. Mix all ingredients together. Shape into bite-size balls.
  2. Bake for 30-45 minutes or until cooked through and starting to turn golden.

When Nutrition Australia unveiled its 'new and improved' healthy food pyramid, legumes was the one food group that appeared twice!   • Nice recipe!! As I am a lacto vegetarian I will just leave out egg. It’s my son’s first year of primary school and I keep thinking what all he can take for his lunch.
