A great healthy snack option
Ingredients (serves 3 | makes 30 tots depending size )
- 2 Zucchinis grated
- 2 Carrots grated
- 4 Potatoes grated
- 2 Eggs
- 1/2 cup Breadcrumbs
- 1/4 cup Parmesan cheese
- 1 tsp Garlic powder
- 1tsp Onion powder
- Salt + pepper
Method
- Grate all vegies into a bowl, Add salt Let sit for 20 mins
- Strain as much liquid from the veggies as you can * I use a tea towel
- Preheat oven 200c Add all the dry ingredients to the mixture and combine together. Add egg and mix
- Shape into "tot" shape and place on greased tray Place in oven cook for 20-25 mins turning half way through cooking
