This is an easy recipe and you can be more creative and add anything you have in the pantry.

Ingredients (makes 30 slices)

  • 12 Dates - chopped
  • 12 Weetbix - crushed
  • 200g Melted Butter
  • 1 Egg
  • 1/4 cup Cocoa Powder
  • 1/2 cup Shredded Coconut
  • 3/4 cup Brown Sugar
  • 1 cup Sultanas

  1. Preheat Oven to 180 degrees C. Prepare slice tin or tray.
  2. Combine butter and chopped dates and simmer on the stove until butter is melted and dates are soft.
  3. Combine all remaining ingredients in a bowl and add in the butter and date mixture. Mix through and put in tin or tray.
  4. Bake for 15 - 20 minutes or until firm.
  5. You can then add icing or shredded Coconut on top to finish. I sometimes leave this up to the kids to be creative.

Notes... My family love this recipe when I add dried Apricots as well.

  • I love the addition of dates to this recipe. This version looks particularly yummy. Great for the school lunch box.

  • The dates would make this slice so moist, and how nice it would be with some chocolate or lemon icing over the top. Hard to stop at only one piece though, especially when you’ve got no willpower (like me).

  • Yum! I remember a version of this. Must give it a try!

  • My daughter can be a really fussy eater so this is a great way to get some fruit and cereal in!

  • I love making weet bix slice and using up the crumbs.

  • This looks and sounds wonderful with no added sugar that’s a plus and can imagine it would be rather filling as well. thanks for sharing.
