Super quick accompaniment to any meal or even great on an antipasto platter, also great for kids lunchboxes. Can eat hot or cold.


Ingredients (serves 4)

  • 1 cup Plain flour
  • 1 Medium zucchini grated
  • 1/4 tsp Salt
  • Water

Method

  1. Add enough water to flour so that it becomes a thick but runny paste.
  2. Add salt and grated zucchini and mix through.
  3. Heat frypan, drizzle in oil and spoon in mixture. Cook until golden on each side. Let rest on paper towel to absorb any excess oil.

Notes

This is a really easy way to serve kids veggies and great for toddlers to hold and eat independently. Serve hot or cold. Traditionally cooked along with the zucchini flower, so you can include if you choose. The ratio of flour to water may vary, just keep adding either until you get the desired consistency.
