As another Anzac Day passes, as always, I start to sift through the collection of Anzac biscuit recipes I have collected over the last couple of weeks. In general, the majority of recipes are similar in their ingredients and methods however, they generally come out different! Some are soft and chewy, others crisp and crunchy and the ultimate one is crisp and crunch on the outside with a soft, chewy center. I’ve still yet to find my ultimate Anazc Biscuit recipe hopefully, this year will be the year. Lest we forget.

  • I intended to make ANZAC biscuits on Saturday and just didn’t get around to it. Perhaps next year.

    I am hoping you have swung by the recipe section and hopefully tried my Wattleseed, Macadamia & White Choc DIGGER ANZAC’s they are a delicious twist to the original and I have added a tip about the crunch or chew factor which I will post here.

    TIP: For a soft, chewy Anzac biscuit ..Omit the brown sugar and increase the caster sugar to 3/4 cup. Bake for 15 mins. For a thin and crispy biscuit ..Omit the caster sugar and increase the brown sugar to 3/4 cup. Bake for 18-20 mins.
