Here is a chocolate cake with hidden veggies that the kids will NEVER know are there!

Ingredients:

  • 1/2 cup butter melted
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tbsp pumpkin pie spice
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 1 egg plus 1 egg yolk
  • 1 cup  chocolate chips
  • 1 cup pumpkin puree

For the ganache:

  • 1 1/2 cups chocolate chips
  • 3/4 cup cream

Method:

  1. Preheat oven to 180 degrees.
  2. Whisk  flour, cocoa powder, pumpkin pie spice, baking soda, baking powder, and salt together.
  3. In another bowl, combine melted butter, sugar, sour cream, vanilla, egg and egg yolk until smooth. Pour wet ingredients over dry and stir until combined, then fold in chocolate chips and pumpkin puree.
  4. Transfer mixture to prepared pan and bake for an hour. Let it cool.
  5. Make ganache: In a saucepan heat cream just until it bubbles. Pour cream over chocolate chips and let stand 2 minutes then whisk until smooth.
  6. Pour ganache over pumpkin bread and serve.

My kids love this – don’t waste any time; bake it today!

  • What is pumpkin pie sauce? I’d love to try this first if someone else is making it!! Anyone??


    • Its something I know you can get in the USA but I wasnt aware that we could get it here. If your store has it then it will be with the herbs and spices.

  • using fruits and veg as sweeteners in cakes is a great idea, but I hate the term hidden veges, it doesn’t help the kids make “good” choices later

  • I love my veggies but my son refuses to touch any food that is orange! I will test out this devious little creation, and if he still magically can detect it, no worries, more for me!!!!

  • This sounds great as I have the worlds fussiest child but he love chocolate & cake it sounds great with hidden veggies never thought of doing that

  • What a great idea, although I am a little unsure of the healthiness of this with the ganache. And also not sure where to buy pumpkin pie spice – I’ve never heard of it!

  • Yes I always add veggies to my sweet treats and try to skip the sugar as much as possible. For this recipe I would use apple, banana or pear instead of sugar. And instead of refined multi purpose flour I often use almond meal, lentil flour or chick pea flour (I even don’t have multi purpose flour or plain flour at home anymore).

  • A great treat to try out Pumpkin Spice I just made up. Plenty of pumpkins around at the moment to use up.

  • Certainly not a healthy cake! Just because it has pumpkin in it doesn’t mean you are feeding your children a healthy dessert.
