Turn left over Beef Bolognese into a high protein, yummy school lunch.

Serves 2.

Ingredients:

  • 4-6 Tbsp leftover beef bolognese
  • 1 egg, beaten
  • 1/2 cup cheddar cheese, grated
  • Baby spinach, chopped (optional)

Method:

  1. Preheat a moderate oven to 180C and line 4 muffin holes with silicon patty pans.
  2. In a bowl add slightly cooled bolognese, beaten egg and spinach (if using)
  3. Divide beef mixture between the 4 patty pans.
  4. Top with cheese and bake 15 minutes or so until golden.
  5. Remove and cool slightly, keep covered in the fridge to add to school lunchboxes the next morning.

  • Very interesting recipe. I don’t usually have any leftover Bolognese, I freeze it for future easy dinners.

  • i have this in the fridge right now and i was wondering what to do with it and then i saw this! if i don’t freeze it, i usually make toasted sandwiches with this as the filler. this is a great idea.
