Hello!

I was wondering if any mum’s out there know if you can freeze gingerbread biscuits and if they defrost ok? I want to make a heap for christmas gifts and was wondering if I could get started now so I don’t spend the whole week before Christmas in the kitchen! Does gingerbread freeze?

  • All biscuit dough will freeze. Butter based biscuits also freeze well as you can freeze butter.

  • Most biscuit dough will freeze. I think the key is to ensure that you don’t get air in the bags when freezing to avoid moisture which will be problematic when defrosting. You could also test part cooking, freezing, then final bake when defrosted.
