For instance with bought product, such as, Merediths goats cheese in oil it always remains liquid. I always use extra virgin olive oil.

  • It is interesting that some oils should be kept in the fridge. Why aren’t they kept in the fridge in the supermarket or other shop you buy it from?

  • I was told it’s good oil if it solidifies. I just let it get to room temp.


  • Oils containing polyunsaturated fatty acids (PUFAs), like nut, seed and fish oils, are especially susceptible to oxidation, so these varieties are best kept in the fridge.
    Some types of cooking oil benefit from refrigeration, while other types can be safely kept outside of the refrigerator. No oil should be kept near a heat source, like an oven or stovetop, or near central heating vents. It can be affected by both light and heat, and over time may become rancid. The oils that should be refrigerated include those with a lower saturated fat content, like safflower, sunflower, and canola.


  • Firstly – I love Meredith’s Goats cheese – YUM!
    It depends on the oil that you are using. There is no way to really tell how much wax is in in the oil. Maybe you could ring Meredith Dairy, or ask on their facebook page. I’m sure they would let you know which one they use :) Good luck.


  • You can’t stop it from solidifying. The oil acts as a preservative, but it will not affect the taste of the cheese in any way. Just make sure to bring the cheese to room temperature before consuming.


  • They say indeed that one way to check if the oil you have is real olive oil, is to put it in the fridge. If it coagulates, you can be sure it’s olive oil.
    It would be better to use different oils in the fridge indeed. You are advised to keep sunflower oil and flaxseed oil in the fridge, so I guess they would be the best choices.


  • Try a sunflower oil or vegetable oil. Check the ingredients on the goats cheese you have. It should say what type of oil it is. Unfortunately olive oil goes firm in the fridge and as far as I’m aware there isn’t any way to prevent it.
