I recently attended a Vietnamese cooking class and here is the recipe for the salad we made (it was delicious).
Ingredients
180 g green papaya
1 capsicum sliced
1 some iceberg lettuce sliced
2 carrot, peeled and finely julienned
1 cucumber sliced
1 cup equal of (green mint leaves, finely sliced, Asian basil leaves, finely sliced, perilla leaves, finely sliced, coriander leaves, finely sliced, spring onion)
1 tbsp fried red Asian shallots
1 tbsp crushed roasted peanuts
1 chilli, sliced
1 cup Nuoc Cham (Dipping sauce – 4 tbs fish sauce, 4 tbs rice wine vinegar, 8 tbs water, Juice of 1 lime, 1/2 tsp garlic, 1 tbs sugar, Pinch of black pepper, Chili to taste)
)
Salad
1.Julienne all vegetables. Rinse them quickly over cold water.
2.Pick up all the herbs and slice them
3.In a large bowl combine the vegetable julienne, nuoc cham.
4.Mix well.
5.Turn out onto a serving bowls.
6.Garnish with fried Asian shallots, peanuts, and chilli.
