I have a super easy recipe and it is delicious and freezes well.
2-3 large leeks chopped and fry off in a big saucepan with butter and garlic, salt and pepper. Once sweated down and tender add your chopped potatoes (1kg) and give a quick fry off. Cover with chicken stock. Pop a few sprigs of rosemary on top and allow to simmer (covered) till potatoes are soft. Remove rosemary sprigs and blend. Stir in double dollop cream and eat. Delicious. Also if you want to change it up you can add a ham hock or a few bacon bones to the simmering process
I usually google up recipes from Taste for potato and leek soup. I tend to add some chilli to mine as well for a bit of spice as I find some of them are a bit bland.
Potato and Leek is one of my favourite soups and we have a secret traditional family recipe. The recipe below sounds good – maybe give it a go and tweak it to your taste buds!
I cut and fry up a few rashers of bacon in a large saucepan, then cut and add a large leek or 2 smallish leeks and cook until translucent/soft. You want the leek to be soft. Add around a litre of stock (good quality store bought is fine). I peel and dice around 6 potatoes (depends on size) I quite like the Coles Carisma ones (low GI and creamy when cooked). I add salt and pepper to taste. Once potato is soft, I crush the lot with a potato masher – no need to make smooth. We enjoy it with a sprinkling of cheese.
