Hello!

My retired parents spend a lot of time preserving fruits, I have been given an abundance of dried apricots and I am looking for recipes for them, slices, cakes, desserts, basically anything to use them up without the kids eating them like chips. Hope someone can help as I would like to make things I can perhaps freeze for lunchboxes. TIA

  • Yes I would make apricot balls too. I just use apricots & desiccated coconut for that. You could also use them for Apricot chicken, homemade muesli bars, fruit leathers, as an addition to muesli/granola, apricot/sultana oat cookies, apricot carrot cake, etc. My son loves a couple of dried apricots in his lunchbox every day

    I have tried this and its really delicious.
    Just google the recipe and at the moment there is even a video showing you how he did it.


  • I use them in home made muesli. I use them to make apricot balls by combining chopped dried apricots, dessicated coconut and condensed milk. They can be used in cakes and slices to give a sweet flavour. They can be used in fried rice and stews to give unexpected texture.


  • JUNE11, thanks for your advice, they have been dried naturally without sulphur, Mum and Dad have a very elaborate setup under their large verandah to enable the large scale drying of fruit, unfortunately they are retired farmers and it never leaves them, they planted about 40 fruit trees before they built their home, so they have different varieties of fruit ripening at different times, Dad also grows tomatoes so we have large amounts of sauce and chutneys, the amount of jam we have is ridiculous, I am one of 4 daughters and we are all doing our best to get thru the produce but it is a challenge, LOL It is nice though to have good healthy food that I know where it has come from and how it has been treated though, Mums apricot jam is simply the best!!!


  • You may need to check what method is used to dry the apricots. Some people use sulphur in the process. Even the smell of it can permeate the fruit and make you very sick if you are allergic to them.


  • Any cake, biscuit or slice recipes that have fruit in them you could either completely replace the fruit with diced dried apricots or put a % in. In some recipes you may need to soak them as they are hard when dry. It started with my relatives 2 generations before me using dried or fresh apricots in all sorts of goodies. Unfortunately my Mum didn’t “inherit” the old recipe books with the exception of the Green & Gold Cookery Book which unfortunately is in imperial measurements. Even the later editions printed about 5 years ago haven’t been converted either.


  • I have been reading these wonderful replies, and I have made some cornflake and apricot cookies, will make some apricot balls tmrw, and I am hunting for a muffin type recipe, I cannot believe these things could cause so much hassle, I certainly appreciate them, but currently I have about 8 kilos or more of dried apricots, and of course they arrived with about 20 large jars of the most divine apricot jam, Mum said that they are about to have some more trees ripen LOL, Is it just me that has this problem with retired parents!!! As I said I appreciate it but how many apricots can I use!!! Keep the recipes coming in thankyou

  • Lucky you! apricots are great in biscuits, slices, cakes, sweets and muffins. They are a great addition to recipes.

  • You are very fortunate because dried apricots are so expensive aren’t they?! Here’s a recipe for Apricot Slice:
    250 g dried apricots
    1 cup coconut
    1 cup almond meal
    3 tablespoons coconut oil
    Soak apricots for 1 hour and drain. Place all ingredients in a food processor and pulse until the mixture reaches the consistency of breadcrumbs. Press into a lined slice tray and sprinkle with extra coconut. Chill for 3 hours, and cut into slices to serve.


  • In the recipe section another mom member posted cornflake, sultana and apricot biscuits using 1/4 cup dried apricots :)
