Hello!

I have so many easter eggs left over from Easter that we just can’t get through. I have tried baking and making brownies with the left over eggs but they just don’t turn out very well. Does anyone have any tips on successful baking with left over easter eggs?

  • One recipe I love is for chocolate surprise muffins – you basically take a nice sweet muffin recipe – cinnamon based works quite well, and push a mini egg into the centre of each one before baking. This works really well with caramel filled Easter eggs as they melt better. But others work too if you don’t mind a solid egg in the middle.
You can also make a nice bread and butter pudding too, adding in the eggs instead of chocolate drops or fruit.

  • One recipe my kids love is using it in icecream:

I get a large loaf pan, 2 L vanilla ice cream, 100g mini marshmallows, 350g coarsely chopped leftover chocolate eggs.

Place ice-cream in a large bowl. Add marshmallows and chocolate. Mix to combine. Freeze for 6 hours or overnight until firm. Serve.

  • How does that even happen? lol
As a family of addicts I can’t even imagine leftovers.
Melt them in the microwave (short burst – stirring inbetween) and have them on ice cream for dessert.Put them out in chunks on a plate when visitors come.
