Hello!

When I cook rice, I spread it out into my dish and cover with cling wrap, and store in the fridge to use the next day. But every time I go to get it out to make fried rice, it always has lumps of rice in it. How do I stop my rice from going lumpy?

  • It sounds like it could have too much liquid in it, or not evenly dispersed liquid. Try fluffing the rice before storing it.

  • make sure your rice is completely cool before you cover it. and dont overcook or stir it too much

  • Rinse out the starch. Rinse under cold water til the water runs clear. Also, don’t over cook it. Lastly, why are you putting cling wrap on it? It needs to dry out to separate, leave it uncovered

  • Have you tried rinsing the rice before cooking? Run it under cold water until the water runs clear, then cook. It washes the starch out, which is the sticky bit

  • Not enough water maybe.bit will soak up water and may dry out even with cling wrap on.

  • are you rinsing it til the water runs clear before cooking it? it may still have some free starch which causes it to clump, or maybe its still warm when you refrigerate it, try leaving it in a coldwater bath (a container of coldwater large enough to sit the container of rice in) then fluffing it with a fork before you refrigerate.

  • Rice is fairly starchy which may be part of the reason why it sticks together so easily.
I would be tempted to partly cook it – in part of the water, drain the excess water off that contains a lot of the starch, then add the rest of the water (hot) and finish cooking.
A lot of people probably won’t agree with me. It is the starch that leeches out into the water that is otherwise absorbed which is high carbohydrate and can raise blood glucose levels, not good for diabetics – or anybody for that matter.

  • my biggest tip is to rinse your rice in a colander for a minute or so with room temp tap water before cooking it, also if its only a tiny bit over watered when cooked/finished, run it under freezing cold water to separate grains then reheat. good luck.

  • It should break up pretty easily, otherwise its over-cooked and a bit soggy (too much water)

  • When you cook rice , please put less water on it . And other thing, if you want to cook fried rice, basmati rice is the best for you to do that.

  • Thanks for your feedback; glad to hear the advice has worked! :)

  • Thank you everyone. I rinsed it and it was lump free. :-)

  • Definitely be sure to rinse the rice first. Also, make sure that you’re not over cooking it. I’ve had lumps in the past when I’ve left the rice cooking or that little bit too long.
    Good luck with it.

  • It would be good if you could let us know how you go with your rice. Hope it is lump free! ;)

  • I agree rinse it before you cook get rid of all the milky water. Cook and then a final wash with cold water. Place in a dish chill and if lumpy just wash again it will separate then drain and cook with it.

  • I agree with the other answers; give it a good rinse and it should be fine and lump free.

  • put it back in the colander and give it a quick rinse.

  • yes rinse rice before use and after cooking

  • Rinse it under cold water after cooking and give it a good shake in a strainer to separate it.
