I always thought they were the same product, corn flour is what we call it in Australia and corn starch is what they call it the overseas. Seems to be a couple of different comments here so now I’m not so sure
Corn starch (aka cornflour) is a very fine, white powder that is used to thicken sauces, etc, and you can buy it in any supermarket. It can make baked goods go a bit gluggy sometimes if too much it used as a substitute for wheat flour. In Australia in the past, cornflour was the name also given to wheat starch (same very fine, white thickening starch). Now companies need to label correctly. It should be on the front, if not, check the ingredients on the back and if it says “wheaten cornflour” it is not made from corn. If it doesn’t say, don’t buy it.
Corn flour (aka maize flour) is a light yellow flour made from finely ground corn and is used in a baking and other things. You can buy it from larger supermarkets, or delis, or good fruit shops. It makes a great coating on drumsticks, rissoles, fish, etc, and fabulous yellow pancakes when used with buckwheat flour. You will see it used in American cooking a bit. It can be ground to different degrees, the coarser grounds look a bit finer than polenta.
Cornstarch and corn flour show some differences between them. Cornstarch is made from the endosperm of the corn. This is due to the fact that starch constitutes the endosperm of the corn. On the other hand, corn flour is made out of the mixing of endosperm with corn gluten. It is important to know that bran constitutes what is called corn gluten. This is the main difference between cornstarch and corn flour
