Hello!

I was wondering if any mum’s out there know if you can freeze gingerbread biscuits and if they defrost ok? I want to make a heap for christmas gifts and was wondering if I could get started now so I don’t spend the whole week before Christmas in the kitchen! Does gingerbread freeze?

  • Yes, I’m pretty sure you can. Though I agree with the suggestions to make a large batch of cookie dough and freeze it, and then bake it as required. Uncooked cookie dough freezes better and longer than cooked cookies!! 🙂


  • They will freeze okay, but after thawing i find i need to pop them in the oven for a couple of minutes to get them yummy again. much nicer to make the dough and freeze until needed. so many biscuit doughs can be frozen.


  • Great question! I’ve always frozen dough with no problem but never tried to freeze the biscuits. Glad I saw this questions and all the useful answers.


  • If you roll cookie dough into a cylinder, wrap in clingfilm, it freezes well – just slice it up and bake, or add to icecream!


  • I would only say freeze for a month Carly… baked and stored without freezing they only last a few days here! LOL


  • Do you know how long they are supposed to keep fresh for once baked? I have no idea but I’d assume a few weeks at least? My sister made some last year and they were still nice a week after Christmas day but I’m not sure when she baked them.


  • I always freeze mine as i make a huge batch and have never had any problems, also freeze shortbread and the basic biscuit mix they come out of the freezer fine.


  • actually saying that, I have found a wonderful recipe for ginger fairings, soft ginger nut cookies. They have to be balled then cooked, and they expand when cooked. If your gingerbread style is similar, this can probably be done, or if you actually cut them, maybe cut the shapes out, flash freeze and then bake when ready. Not sure which method would be better, but I don’t think the bsicuits would freeze well


  • I’d go for making a few batches and freezing the dough, then bake, cool and pack closer to the day

  • I have… they only really keep their freshness for a few weeks… Shortbread freezes ok too… Leave them out to defrost at room temperature… Freezing cookie dough is better… make a batch and wrap it in cling wrap… I ALWAYS have cookie dough in the freezer! You can cut some off and pop them in the oven if anyone drops by!! EASY!!! 🙂
