Hello!

I seem to have mountains of shortbread leftover from Christmas! Any recipes that use shortbread would be helpful!

  • Freeze until you decide… I’m thinking as part of desserts… Apple crumble, on ice cream, sundae…as part of a base for a torte or cheesecake.


  • Freezing it to use as a cheesecake base is always our go to =)


  • You could cover them in chocolate, crush them up and use them as cookie crumbs (add them to ice cream, decoration on a cake or chocolate dipped strawberries, use in a pie crust), or maybe frezee them and eat later?


  • am liking the idea of rocky road (I like to mix it up a little by adding crushed left over biscuits from time to time so not so rich), crush them up as topping for a crumble, crush them up for a cheesecake base too or for a eton mess!

    Shortbread Rocky Road Bars
    Shortbread Rocky Road Bars
    YIELD: 12 ( 12 Servings )PREP: 10 minsREADY IN: 2 hrs 10 mins
    A perfect blend of marshmallows, chocolate, and shortbread cookies!

    Ingredients
    1 cup chocolate chips, milk or semi-sweet
    4 Tbsp salted butter, softened
    12 shortbread cookies, broken into pieces
    2 cups mini colored marshmallows
    Instructions
    Place chocolate chips in a large, microwave safe bowl and heat until melted.
    Add butter and stir until smooth.
    Add marshmallows and cookies pieces until well coated.
    Pour mixture into an 8X8 pan, pressing down with the back of a spoon.
    Refrigerate for about 2 hours or until firm.
    Remove from refrigerator, cut into pieces, and enjoy!
