Depends where in New South Wales you’re looking there are heaps of beautiful spots on the far north coast but if you are driving from Sydney it’s probably a bit far.
I don’t know I’d call it “rural” but Merimbula on the far south coast is awesome. There are lots of activities to do with the kids including a native animal sanctuary where you can see echidnas, koalas, snakes etc up close.
We loved the Hunter Valley. We rented a self-contained cottage that, in the early morning and evening, was surrounded by so many beautiful kangaroos. 🙂
We’ve stayed at the Wagga Wagga Beach Caravan park. Wonderful self contained cabins that are very affordable with on site laundry facilities. Walking distance to the centre of town, on the banks of the Murrimbidgee River. A short drive to many local attractions. Lots of animals in the paddocks on the side of the road
