I cook vegetarian every day. There are literally no limits on what you can make. Every dish you make with meat, you can make without meat. There are many substitutes on the market, from sausage rolls till beef style strips, burgers, nuggets, chicken style schnitzels etc. My kids love the bacon style rashes, hotdogs and tempeh too. When you don’t feel for ccoking with substitutes you should make sure to add plenty of lentils and bean, eggs and things like nuts and a great variety of beautiful vegetables in the diet (make sure to add plenty of greens for sufficient amount of iron).
We just had the best vegetarian tacos for dinner. Start with a large tin of baked beans and add a tin or two of crushed tomatoes. Add chopped vegetables -broccoli, zucchini, mushrooms, green beans, carrot, sweetcorn etc. Cook it all up . Then have this with taco shells, sour cream , grated cheese, lettuce, fresh tomato, cucumber and capsicum. This is one of our all time favourite meals. 🙂
If you end up with any left over mix – put it in a casserole dish with mashed potato on top, sprinkle on grated cheese, diced onion and diced tomato and back until it’s all warmed up. Delicious 🙂
Depends on what you would like to start with, for example, if you are a beginner, try something you can make in 5 to 10 minutes, then venture out to some simple easy and quick recipes using ingredients readily available, follow the instruction and put together something delicious and rewarding. We are from chinese background and any stir fry vegetables are easy . Heat up some oil with garlic and ginger then when hot throw in some mix vegies (choices includes chinese buk choy, baby corn , mushrooms/champignons , onion , carrots, bean sprouts ,etc ), add some soya sauce or oyster sauce to taste and you can have this with boiled rice or noodles .
I always enjoy pasta dishes, pizzas, stir-frys, and fried rice dishes as they can be either vegetarian or non-vegetarian, and can vary depending on the ingredients you have in your fridge/pantry.
One of my favourites is a mixture or ricotta, rice and spinach mixed together and then sandwiched between layers of grilled potato and eggplant in a baking dish and baked for about 40 min until its all cooked through.
New recipes probably depends what you are eating now! (1) Looking outside your culture often provides a range of different foods – from the actual fruits and vegetables themselves, to the flavours and spices used. You could look up Chinese or Asian recipes (although sometimes sourcing the ingredients is hard). (2) Search out new books. I’ve been vego for over 10 years now I’m always on the lookout for new recipes. I love eggplant snitzels, all manner of curries (chickpea, veg korma, Dahl), lasagna, home made pizzas, chilli beans ( so versatile, in baked potato, taco, potato pie, wrapped in puff pastry) and cannelloni. Quorn offer a range of meat substitutes which makes converting traditional meat recipes into vegetarian really easy. The non chicken fillets and mince work really well.
