Hello!

Our family Loves a warm and comforting pumpkin soup during the winter months. The problem is we always end up with heaps of leftovers and I’m looking for some exciting ways of using them, instead of just freezing it. What are some fun things to do that are also kid friendly?

  • I add it to pasta like tortellini and add some onion, garlic and spinach

  • Use it in a risotto; add some to things like stews to give a bit of extra flavour.

  • Use it in risottos, or mix with mashed potatoes. Both are very tasty.

  • there are oodles of options.
use to make a vegetable curry(fry onions add curry powder cook add veg and soup reduce done
thicken soup with a roux use as sauce in veg lasange
mix in pasta frozen veg and top with cheese for a pasta bake
    those are a tasty few

  • As a pasta sauce, yummy! As a dipping sauce for veggies maybe. Add some herbs and spices, thicken and use as casserole base.

  • I use it as a ‘sauce’ for pasta or veggies

  • I would make a bit thicker with a bit of Corn flour and make into a pasta sauce

  • Give some variation through spices or add this to another soup

  • I like the ifmdea of adding to another soup base or using some in a read recipe as part of the wet ingredients

  • I’d turn it into the base for a yummy pumpkin risotto or pasta!
It’s a bit more effort, but if you added it to risotto & then let it cool, you could create arancini balls which the kids will absolutely love!

  • Oops! should read should below – there seems to be an error with posting?

  • Oops! my comment below she read leftover and not left!

  • I add it to make mac and cheese! The kids can’t even tell the difference :)

  • We never have any left pumpkin soup! :)
Some of the ideas below are good!

  • Give it to family!

  • I freeze them in little containers and add them to other soups as a flavour injection. Or use it as a base for a pasta dish ie pasta, morrocon seasoning and the soup makes a yummy pasta!!

  • Add eggs and turn them in a pumpkin pie, add as sauce to oven dishes, add to pasta sauce, add to the batter of pancakes as replacement of milk, use them as ingredient of pumpkin scones.

  • Maybe as a pasta sauce base or even as a base for stew or casserole

  • I think it’s best to re-use a sauce base too. Ricotta and anything you like would be amazing in a pasta dish with this.

  • Make a richer sauce for slow cooker meat by mixing in some pumpkin soup.
