The Black & Gold vanilla cake is a staple in my pantry. Its the best base for so many different cake options, you can make a cake in 25 mins and trick it up with whatever fruit is in season… in our family the Feijoa cake and the Nectarine cakes are favourites!

When mixing up the cake batter, simply replace some of required liquid or eggs with the equivalent in mashed or pureed fruit …. get imaginative, oranges, lemons, raspberries, rhubarb, apples, apricots, pears and blueberries these all make amazing cakes – you will appear fancy, the family will love the taste and no one ever will guess its a packet cake!
