Okay, so we all know there’s ALWAYS some leftover sausages after a BBQ. But they get a bit “blah” sometimes and end up going to the dog/cat/rat in desperation. Well, why not wrap them in dough?
Find a bread dough or pizza base recipe you really like and make a batch.
Break into as many balls of dough as you have sausages left.
Roll it out in roughly square/rectangular shapes, wide enough to wrap around the size of sausage you’re using and long enough to go past the end of the sausages.
Sprinkle with grated cheese, diced ham, pineapple, capsicum or whatever you think will go nicely with the sausages you have.
Place the cold, cooked sausages on the dough and roll them up inside.
Allow to rise in a warm place for 20 minutes while the oven preheats to 180C
Bake until golden.
Can be eaten hot or cold.
Handy for school lunches, snacks, lazy summer weekend nibbles, etc.

  • We sometimes have leftover sausages after dinner. Thanks for suggesting the pizza, sounds good. I’ve made omelettes out of them just but cutting them up and mixing shallots or chives and whisks some eggs in and serve it with rice or potatoes etc ..

  • Basically a sausage roll up pizza ?? I was going to suggest a sausage pizza, just like your roll ups but don’t roll up. I love cold sausages with sauce….yummo

  • I’m very much as my grandma would say “a waste not, want not” kind of person. I hate seeing things go to waste and this is a fabulous idea.


    • Also handy when you’re at the end of the fortnightmonth, no cash left, no money in the bank and out of bread – sausage & bread without having to hunt behind the sofa for change

  • Oh wow what a great idea for leftover BBQ snags! That’s one I am going to try especially for the kids lunch boxes. Thanks for sharing. Its always hard thing to come up with for using leftover BBQ meat. I would love to see an article with more great tips like this one in the future.


    • I guess I better post the leftover vegetable scrolls method, then. Although you can probably take a guess at it from the description and the photo.
      BTW, you could probably do rissoles the same way as the sausages.

  • Cold sausages are also nice sliced and put on rolls or sandwiches the next day with sweet chilli sauce or plain old tomato sauce if you prefer!

  • Mm… Sounds like carnival food! Yummy! Will try this next time we have left overs!


    • The idea came about when I didn’t have any mince meat or puff pastry to make sausage rolls with my son, but DID have a half dozen sausages in the fridge and a lot of practice making pizza dough, plus other ham & pineapple ingredients. I figured “why not?”
