white choc and raspberry muffins, spongecake with jam and cream, caramel slice, peppermint slice, rocky road, coconut ice, jam drop biscuits, custard biscuits, banana bread, fruit loaf, fruit sticks, chocolate crackle, honey joys, fairy bread.

Depending on how many people, I’d make either muffins or biscuits.

Cakes are always good. Muffins are great too. Biscuits so many to choose from. And maybe some slices

Raspberry jam coconut slice: sweet, delicious and easy to transport and really does not get affected by the heat. You can even carry it to the picnic in it tray.
INGREDIENTS
2 cups plain flour
1 cup caster sugar
125g butter, chilled, cubed
3 eggs
1 teaspoon vanilla essence
3/4 cup raspberry jam
METHOD
Step 1
Preheat oven to 180C. Grease and line a 3cm deep, 24cm x 29.5cm (base) lamington pan.
Step 2
Process flour, 1/2 cup sugar and butter to resemble breadcrumbs. Add 1 egg and vanilla. Process to form a dough.
Step 3
Press dough into base of prepared pan. Bake for 15 to 20 minutes, or until light golden. Spread jam over warm base.
Step 4
Whisk remaining eggs and remaining 1/2 cup sugar together. Stir in coconut. Spread over jam. Bake for 25 minutes, or until golden. Cool completely in pan. Cut into pieces. Serve
2 cups desiccated coconut

Muffins, banana bread, fruit kebabs, tarts.. Have a look in a kids recipe book, there are always hidden gems!

For picnics I often bring banana bread, sweet potato brownies, vegetable muffins, nuts, crackers, split pea chips and when you bring a coolbox fruit, cheese and even sometimes a yoghurt are perfect snacks !

Fruit kebabs are good and healthy sweet treats and will get gobbled up on a hot day. A selection of sweet muffins, some to eat and some to freeze, the same with date and banana breads.

Good old yum yum balls. Biscuits, sweetened condensed milk, coconut and cocoa. You won’t bed to freeze as there won’t be leftovers

I would make cupcakes or brownies for a picnic!

Truffles.. Lamington fingers can be purchased cheaply and frozen.. Honey joys..(not sure if they freeze well..
