Never cooked with rhubarb before so need an easy recipe please. Looking for muffin recipe that can be frozen also.

  • You can add apple to any rhubarb recipe. It reduces the effect of the acidity of the rhubarb. Soem people also add finely chopped dates to it.
    I don’t think I would use spices in it if feeding it to little ones, nor eat it if breastfeeding.


  • there is a great raw rhubarb cake that is moist and keeps for several days. It can also be used with Apple to make rhubarb crumble. Just chop the apple and rhubarb together and cook till soft in microwave then add crumble mix and bake in oven till brown.


  • My recipe is to cook your rhubarb in a microwave oven.
    250 gm Fresh rhubarb cut into 10cm sticks
    1/2 Cinnamon stick,
    1/2 teaspoon ground nutmeg
    1/2 teaspoon ground ginger
    60 gms orange juice
    Place all these ingredients into a microwave oven dish and heat in 1000w oven for 6 minutes.
    Add 1 1/2 tablespoons honey and mix thoroughly
    Heat on power 7 for further 4 minutes to amalgamate the honey.
    Enjoy with custard, cream or vanilla yoghurt.
