What about rather than icing using some colourful sweet fruit such as grated carrot or sliced banana, this could still look bright and taste nice

1/2 cup butter, room temperature
1 1/4 cup Confectioners Swerve or powdered erythritol
1 teaspoon vanilla extract
1/2- 1 teaspoon vanilla liquid stevia
1 tablespoon milk as needed

Would love to hear what you ended up using, I have never made one that was sugar free before. I guess you could have made one with a sweetener like stevia to replace the sugar.

I like buttercream icing but it has icing sugar in it.
