Hello
I am looking for a recipe that mum’s used to use to make lamingtons for the drives we had in primary school. Specifically the ones that had the cream filling. For some reason I remember the filling being more than just whipped cream (I could be mistaken) but the recipes I have found so far all simply use whipped cream with sugar. I would greatly appreciate any help… I just want to relive a childhood memory🥹

  • I don’t have a recipe for the Lamingtons themselves but I made Cream Horns that Julie Goodwin had in one of her books and the Mock Cream in them was very old school. I don’t think I should share that here as it’s from her book but if you can get hold of that is it lovely.

Another thing to do is modify recipes and lamingtons. Lamingtons can be made or purchased and the fillings added to them.

  • I think you are talking about ‘mock cream’ or buttercream-style. It has more body, is less perishable, and held up better in contsiners/ foil.

    Here’s the buttercream recipe. Let me know if you want the lamination and topping recipe also.

    Based on 8 lamington sandwichs – 125g butter (softened), ¼c caster sugar, 1 tbsp milk, 1 tbsp boiling water & ½ tsp vanilla essence

    Beat butter and sugar until pale and fluffy (apx 5 mins). While continuing to beat, slowly add milk, water, and vanilla until light and creamy.


  • I have very fond memories of eating these sweet and delicious treats and would also love to know the recipe. They always tasted like there was a layer of sweet jam and then cream. I have seen them at the bakery and they might be able to help with what is in them.


  • I do love a good lamington, preferably one without filling – fillings tend to be cream or jam and I don’t really like either! I have also never been able to make lamingtons myself – the icing defeats me every time – so I’m afraid I don’t have a recipe either.


  • Back when my daughter was in primary school I remember a local bakery supplying all the lamingtons. They were cream filled (my favourite!) but I don’t remember anything else aside from standard cream. I suppose you could add some strawberry jam in the middle too.
