Hello!

I am craving roast veggies most nights but with the weather heating up I would rather something else than a roast to go with them. Does anyone have any suggestions?

  • My daughter likes them most on a bed of lettuce with some feta and pine nuts. Personally I think they go well with cashews and sometimes blue cheese on a bed of spinach/lettuce


  • You can have roast veggies with cold meats like Ham, or a precooked roast chicken served cold.


  • Roast pumpkin in particular goes really well in salad! I have a beautiful recipe with baby spinach leaves, roast pumpkin, chorizo and feta and its amazing 🙂


  • My suggestions are suited to cold weather meals. Like a lamb and bacon casserole or apricot chicken, roast veggies are a perfect accompaniment to both. I would think they would probably go well with a BBQ steak and salad too for warmer months


  • we serve them up most nights, as my son is autistic and hates change LOL. I am big on fillets of pork, fish, chicken or beef, and add a gravy and a steamed green and you have a great meal. You can bubble and squeak too and serve with a fried egg, or use roast vege in cous cous to make a salad. Lots to do – all the best


  • You could do a roast veggie salad. I like roast capsicum, zucchini and pumpkin mixed with baby spinach, a bit of feta and drizzled with olive oil, salt and pepper and a spoonful of dijon mustard.


  • chicken, cornbeef, shcnitzel, parmigiana, ham, sausages. rissoles


  • Chicken parma, cutlets with diane sauce or steak


  • A roast vege frittata is a lovely way to eat vegetables and on warmer nights is yummy cold with a crisp garden salad.


  • Roast veggie pasta, roast chicken, roast veggies with BBQ prawns..in getting hungry thinking of all this yummy food.


  • I think almost any cooked meats could go with roast veggies other than a stirfry, chicken schnitzels, slow cooked food, grilled meats etc.


  • Roast vegies are also delicious cold and chopped in a salad with a drizzle of dressing.


  • Grilled chicken breast, a steak, pork chop, lamb chops, rissoles.


  • You could mix your roast veggies with cous cows or quinoa


  • Chicken Schnitzel is quick and easy and good with roast vegies.


  • Do your veggies and have lamb cutlets with gravy to go with them,delicious!


  • You could roast the veggies and then serve them with tortillas or pitta bread. Everyone can fill them as they like them.


  • Sometimes roast veggies in a frittata, or as part of a salad works well. You get the flavour and a cooler, healthier way to eat them.


  • I love roast veggies too and it is so easy isn’t it. Cut them up , putthem on a baking tray and brush with olive oil . Though it does take under an hour to cook , but it is worth it. If I have a light dinner, it can be anything from grilled sausages, rissoles ( though it sometime breaks 🙁 ) , or maybe noodles which you can have either Asian or 2 minutes . if you really want to have a healthy diet what about boiled rice with it . I enjoy vegetarian and sometimes I just don’t want any meat. Good luck with it .
